Olive Oil, for greasing grill
2 lbs ground beef ( 1 lb. each chuck & sirloin)
2 (4 oz) cans green chile peppers, drained and diced
2 tsps. ground chili powder
4 garlic cloves, minced
8 Monterey Jack cheese slices
1 large Vidalia onion cut into 8 1/4 in thick rounds
8 brioche hamburger buns split
8 large romaine lettuce leaves, sliced crosswise
2 medium avocados, sliced
1 cup salsa
Heat grill to medium high and grease grates with oil.
In large bowl, combine beef, chilies, chili powder & garlic.
Form into eight 1/2 in. thick patties. Grill burgers for 5 minutes, then flip. Top with cheese & continue to grill to desired doneness.
Meanwhile, grill onions until soft & with char marks- about 2-3 mins. Transfer onions & burgers to a plate. Grill buns until char marks – about 1 min. Transfer to plate.
Assemble: Place lettuce on bottom half of each bun, top with a burger, 2 avocado slices, 2 tblsp. salsa, grilled onions and bun top.
