Boneless Prime Rib of beef
Marinade Equal parts of:
- Olive Oil,
- Red Wine Vinegar
- ½ part Worcester Sauce
- 1-2 tbsp Hot Mustard (English or Dijon works)
- Tabasco sauce to taste
- Add liberal amounts of Montreal Steak Spice and stir
Directions:
- Poke and/or score the surface of the meat and marinade roast overnight ( Tip: I use a garbage bag.)
- Pour over the meat in the bag and roll to make sure coverage
- Try to turn once or twice overnight to keep the meat immersed
- Place on BBQ Rotisserie for approx 20 mins per pound on med high (approx 400F)
- Keep the marinade for basting (or use the drippings)
- Check readiness with a meat thermometer
- You can, of course, cook it in the oven
